Gluten Free Scotch Eggs With Sausage

Try these traditional protein-packed Gluten Free Scotch Eggs for breakfast or a snack! This recipe uses homemade breakfast sausage made from scratch. The sausage is breaded using eggs, flour, and rice chex cereal, which provides the perfect gluten free, crispy, crunchy coating without frying.

This recipe for scotch eggs is modified from my Grandma's handwritten recipe notebook. Her chickens laid dozens of eggs, and she had to use them up! Making scotch eggs was a delicious way to use up eggs and ground pork.

  • Raw Egg - One raw egg is beaten and used as one of the steps in the breading process.
  • Gluten Free Rice Chex Cereal - Crushed into crumbs, it makes the perfect inexpensive gluten free breadcrumb alternative.

Step-By-Step Instructions

Step 1: Mix the spices and dijon mustard into the ground pork in a medium bowl using clean hands. Roughly divide the sausage into fourths. Set aside.

Step 2: Add the rice chex to a small food processor bowl and pulse until they resemble bread crumbs. Alternatively, use a ziplock bag and a heavy spoon to crush the cereal. 

Step 3: Grab three shallow bowls. I like to use pie pans for this. In one pan, add the gluten free flour, in another, the beaten raw egg, and in the final bowl, add the rice chex crumbs.

Step 4: Using a small piece of plastic wrap, flatten one-fourth of the sausage meat mixture into an oval shape.

Step 5: Roll a hard boiled egg into flour. Doing this step will help prevent the sausage from sliding off the egg. 

Step 6: Next, place the egg in the center of the flattened sausage and cover it completely with sausage. 

Step 7: Then, roll the sausage-covered egg into flour again. 

Step 8: Place the egg into the beaten egg mixture and roll until covered.

Step 9: Finally, carefully place it in the cereal bowl and cover it entirely with crushed rice chex.

Step 10: Gently place the breaded egg on a baking sheet covered with parchment paper and a wire rack. Spray the wire rack with nonstick cooking spray to prevent it from sticking.

Repeat the same process with the three remaining eggs.

Place the baking sheet in a preheated 400 degree F oven for 30-35 minutes or until the sausage is cooked and golden brown.

Tips

  • Use hard-boiled eggs purchased at the grocery store.
  • Use breakfast sausage, like Jimmy Dean, rather than making one from scratch.
  • For additional crunch, spray the breaded hard boiled eggs with a nonstick cooking spray.

Ingredient Swaps

  • Bread Crumb Options - Use gluten free panko breadcrumbs, or traditional gluten free breadcrumbs.
  • Meat Options- Ground turkey makes a lower-calorie, lower-fat breakfast sausage option.

Variations

Spicy Sausage Scotch Eggs: Add ¼ teaspoon cayenne pepper and increase the crushed red pepper to ½ teaspoon. Add a few drops of hot sauce into the sausage mixture, too.

Italian Sausage Scotch Eggs: Use Italian sausage instead of breakfast sausage for a different flavor profile.

Scotch Duck Eggs: Use duck eggs instead of chicken eggs. Reduce the total eggs to 3 eggs due to the larger size.

Low Carb Scotch Eggs: Swap the rice chex cereal for pork rinds.

Storing and Reheating

Storing: Any leftover eggs should be stored in an airtight container in the refrigerator. They will last up to four days.

Reheating: The best way to reheat is to place on a baking sheet in a preheated 350 degree F oven for 20-25 minutes. The breading will crisp up again. Scotch eggs are also great cold. They are perfect for a quick protein packed lunch!

What To Serve With Scotch Eggs

These savory scotch eggs are perfect for both breakfast or dinner! Serve them with gluten free pancakes, orange sugared toast and fresh fruit. Another great option is to serve them with a side of roasted tiny potatoes and a veggie. Add dipping sauces like dairy free ranch dressing, stone ground mustard, dijon mustard, or homemade buffalo sauce.

Ingredients

  • 1 pound ground pork
  • 1 teaspoon kosher salt
  • ½ teaspoon dried parsley
  • ¼ teaspoon poultry seasoning
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon dried thyme
  • ¼ teaspoon crushed red pepper

Instructions

  • Preheat oven to 400 degrees F.
  • Hard boil four eggs. I love to use an Instant Pot for this task. Step-by-step directions in this post.
  • In a medium bowl, add the ground pork, salt, parsley, poultry seasoning, black pepper, dried thyme, crushed red pepper, coriander, and dijon mustard. Use clean hands and mix the seasonings into the ground pork. Roughly divide the pork sausage into fourths. Set aside.
  • Peel the hard boiled eggs.
  • In a small food processor or a ziplock bag and a heavy spoon, crush the rice Chex cereal into crumbs.
  • Grab three shallow bowls, pie plates work great for this. In one bowl add the gluten free flour, in another bowl add beaten raw egg, and in the last bowl add the rice chex cereal crumbs.
  • Grab one peeled hard boiled egg and roll it into the gluten free flour.
  • Next, roll the egg into the beaten egg.
  • Finally, coat the egg in the rice chex cereal crumbs.
  • Place the breaded egg on a baking sheet covered with parchment paper and a wire rack. Using a wire rack allows the hot air to circulate the egg and make it crispy.
  • Repeat the same steps with the remaining three eggs.
  • Place scotch eggs in a preheated 400 degree F oven for 30-35 minutes or until golden brown.

Use a certified gluten free rice chex cereal and spices if cross-contamination is a concern.
