What You'll Need

- Tater Tots - Everyone's favorite ingredient. They soak up the creamy egg mixture, creating a perfect texture. Use a certified gluten free brand if needed.
- Eggs - Fresh local eggs are the best, but whatever kind you can afford will work, too.
- Milk - Use regular milk, lactose-free milk, or unsweetened almond milk.
- Sour Cream - For the ultimate creaminess, use a full-fat option.
- Pepper Jack + Cheddar Cheese - Two great cheese options - one classic and one with a hint of spice.
- Breakfast Sausage - The flavor of the breakfast sausage complements the other ingredients in this recipe. Our favorite is turkey sausage or homemade breakfast sausage.
- Salt + Pepper - Simple seasoning to bring the egg mixture together.
- Green Onions - Adds color and a bit of onion flavor that won't overpower the eggs.
- Red Bell Pepper - Adds a beautiful pop of red and a wonderful flavor.

Step-By-Step Instructions

Step 1: Brown the sausage
Cook the sausage in a skillet until fully browned. Drain excess grease and let it cool slightly.

Step 2: Layer the casserole. Place the tater tots in a single layer in a greased 9x13-inch pan. Top the tater tots with the sausage, diced red peppers, chopped green onions, and half the shredded cheese.

Step 3: Whisk the egg mixture
In a large bowl, whisk eggs, milk, sour cream, salt, and pepper until smooth.

Step 4: Finish and refrigerate overnight
Pour the egg mixture over the tater tot layers. Cover tightly and refrigerate overnight or for at least 4 hours
No time to wait? If you want to bake right away, you can. The breakfast casserole will have a more potato-ey texture.
Step 5: Bake until golden
Bake uncovered at 350 degrees F for 45 to 55 minutes, or until the center is set and no longer jiggles when gently shaken.
Sprinkle the other half of the shredded cheese over the top for the last fifteen minutes. Serve immediately with toppings if wanted.

Ingredient Swaps
- Sausage Options: Substitute the turkey sausage with pork breakfast sausage like Jimmy Dean, or use chicken breakfast sausage. We've tried both, and they work great.
- Plain Greek Yogurt - Swap out the sour cream and use Greek yogurt for a protein option.
Flavor Variations
The basics of the casserole, the tater tots, and the egg mixture should stay the same, but feel free to experiment with different meat, cheese, and veggie combos.
- Ham and Swiss Cheese Breakfast Casserole: Use diced ham and Swiss cheese instead of sausage and pepper jack and cheddar cheese.
- Bacon and Cheddar Cheese Breakfast Casserole: Use fully cooked bacon and cheddar cheese.
- Veggie Lovers Breakfast Casserole: Add chopped broccoli, chopped spinach, and mushrooms - go wild!

Came out good , but have one quick question: Is it best to bake the tater tots first, or just put them right into the casserole dish from the freezer? I didn’t make them and they were not crunchy. Thank you
Venessa Mandelkow says
Hi Carrie!
I usually put the tater tots in still frozen and let them soak up the egg mixture overnight for a potatoey-eggy casserole. However I have created sheet pan breakfast burritos, that bakes that tater tots first! The tater tots have a bit more texture and roll up into quick and easy burritos. We love both of them equally. 🙂 Thanks for taking time to ask a question! I see lots of awesome tater tot recipes in your future - Venessa
