Easy Loaded Mashed Potato Bowls

There is just something about comforting Loaded Mashed Potato Bowls for dinner. Creamy mashed potatoes topped with homemade chicken nuggets, salty crumbled bacon, shredded cheddar cheese, and sweet corn - all drizzled with ranch dressing. This is an easy meal, totally customizable, and one of my favorite recipes.

  • Sour Cream - Use dairy free or lactose free if needed. It adds an extra punch of creaminess. 
  • Ranch Dressing - Make a dairy free ranch or use your favorite bottled ranch dressing.

Step-By-Step Instructions

Make or use leftover:

  • Mashed Potatoes
  • Chicken Nuggets
  • Fully Cooked Crispy Bacon
  • Ranch Dressing

Step 1: Add a cup or two of creamy mashed potatoes to the bottom of a wide bowl. Add a bit of salt and pepper if needed.

Step 2: Next, add warm, chopped chicken nuggets.

Step 3: Heat a bag of frozen sweet corn either in the microwave or in a saucepan. Add a spoonful to the bowl.

Step 4: Add a handful of shredded colby jack cheese.

Step 5: Crumble a bit of bacon over the bowl.

Step 6: Chop up a few green onions and sprinkle over the bowl. Add a dollop of sour cream. 

Step 7: Drizzle ranch dressing over the entire bowl. 

Tips and Tricks

Use Prepared Mashed Potatoes - Grab a bag of premade mashed potatoes from the grocery store.

Shortcut For The Bacon - Use high-quality bacon bits made from real bacon. 

Ingredient Swaps

  • Potato Options- Swap out the mashed potatoes for mashed sweet potatoes. 
  • Chicken Options - Use diced chicken breasts instead. Use either the Dutch oven or a slow cooker cooking option for easy meal prep.
  • Sauce Options - Swap out the ranch dressing for BBQ sauce - or use both!

Variations

Vegetarian Potato Bowl: Replace the chicken nuggets and bacon and replace them with drained, rinsed black beans. 

Breakfast Potato Bowl: Remove the chicken nuggets and replace them with scrambled eggs. 

Loaded Veggie Potato Bowl: Add broccoli florets, sauteed bell peppers, yellow squash, and zucchini.

Storing Leftovers 

Store: Keep individual ingredients in separate airtight containers. This will keep the customization option open for anyone who wants to enjoy leftover potato bowls. 

Reheat: Place the mashed potatoes, corn, bacon, and chicken nuggets in a bowl. Reheat until warm. Add the green onions, sour cream, and ranch after heating. 

Using Leftovers

Making loaded potato bowls is a great way to use up leftovers - I’m looking at you Thanksgiving and Christmas! Grab those leftover mashed potatoes and make a potato bowl. This recipe is also great for meal-prepping lunches all week long. Some work weeks require the ultimate comfort food.

Ingredients

  • 4 cups mashed potatoes (Note 1)
  • 12 chicken nuggets (Note 2)
  • 12 ounces frozen corn
  • 2 cups shredded cheddar cheese
  • 4 strips fully cooked bacon
  • 2 tablespoons green onions chopped
  • 1 cup sour cream
  • ½ cup ranch dressing
  • salt and black pepper

Instructions

  • Follow the cooking instructions on the package of frozen corn. Set aside.
  • Place 1 cup of warmed mashed potatoes in each bowl - season with salt and black ground pepper.
  • Cut each chicken nugget into fourths. Add four nuggets to the bowl.
  • Add a couple of spoonfuls of the cooked corn to the top of each bowl.
  • Sprinkle a teaspoon of green onion tops.
  • Add a quarter cup of sour cream.
  • Drizzle ranch over it all, and enjoy.

Notes

Note 1: Use leftover mashed potatoes or make almond milk mashed potatoes. Mashed sweet potatoes work too!
Note 2: Make homemade ground chicken nuggets or purchase your favorite brand. 
Meal Prepping Notes: If meal-prepping this in advance, leave off the sour cream and ranch dressing until after reheating the bowl.
Storing Leftovers: Keep any leftovers in individual bowls in the refrigerator for best results when reheated.
