  • Gluten Free Tortillas: soft and flexible, so they roll tightly and slice cleanly. I used Mission gluten free tortillas with great success. Try to find the freshest package; they roll the best.
  • Softened Cream Cheese: adds structure and helps the pinwheels hold their shape.
  • Sour Cream: lightens the filling so it spreads smoothly without tearing the tortilla.
  • Homemade Dry Ranch Seasoning: gives easy ranch flavor with pantry spices.
  • Dried Dill: boosts the ranch flavor.
  • Bell Peppers: adds sweetness and bright color for a vibrant look.
  • Broccoli Florets: finely chopped for fresh crunch in every bite.
  • Radishes: add a peppery flavor and pink edges for visual pop.
  • Carrots: add texture, crunch, and a pretty color in each spiral.

Step-By-Step Instructions

Step 1: Mix the creamy layer
Stir together the softened cream cheese, sour cream, ranch seasoning, and dried dill until smooth and easy to spread.

Step 2: Prep the veggies
Finely dice the bell peppers and broccoli florets. Stir them into the creamy mixture.

Thinly slice the radishes, and use a peeler to make carrot ribbons down the center of each carrot. This is my favorite peeler for this task!

Step 3: Assemble
Spread a thin, even layer of the creamy mixture over each tortilla, leaving a small border (about ¼ inch) around the edges.

Tortillas cracking? Try warming them up in the microwave for 10-15 seconds before spreading the cream cheese layer.

Step 4: Roll and slice
Lay the carrot ribbons in a single layer and place the radishes down the center in a single row. Roll the tortillas tightly. This method creates a pretty swirl.

Use a sharp serrated knife with gentle pressure to slice each roll into pinwheels. Let the knife do the work.

Wipe the blade between cuts for clean slices. Arrange on a tray and serve right away for the best texture.

Tips and Tricks

Gluten free vs. flour tortillas: gluten free tortillas do not handle moisture the same way. They soften quickly, so you cannot roll them ahead of time and chill like traditional pinwheels. Assemble and slice them right before serving for the best texture.

Tortilla Options: Try a gluten free flatbread, or gluten free wraps, but be aware they may not give that classic swirl of tortilla roll ups. Not gluten free? A regular flour tortilla will work too!

Use finely chopped veggies! Smaller pieces roll tighter and give cleaner slices. Save the leftovers for snacking with cottage cheese ranch dip.

Skip watery veggies! Stick with firm, dense veggies and skip watery, heavy veggies like tomatoes or cucumbers. 

Use toothpicks! To keep the pinwheels in place, add a toothpick. I love using these fancy toothpicks from Amazon.

Ingredient Swaps

  • Try different veggies: Like shredded cabbage, baby spinach, or green onion tops. Keeping the amounts roughly the same, otherwise your tortilla roll up will become more burrito sized, which might be awesome too! 
  • Use plain Greek yogurt instead of sour cream for a higher protein option. 
  • Replace the ranch seasoning and dried dill with taco seasoning without garlic or onion to create a spicier, creamier base.

Special Diet Variations

Low FODMAP Tortilla Roll Ups: Choose lactose free cream cheese and lactose free sour cream. Use a low FODMAP ranch seasoning recipe or purchase a certified Low FODMAP ranch seasoning mix from Amazon. 

Dairy Free Roll Ups: Use a dairy free cream cheese like Kite Hill and a dairy free sour cream. Use dairy free ranch seasoning, too! Most dry ranch seasoning mixes include dairy, so double check the ingredients to be safe if purchasing from the store. 

Vegan Pinwheels: Replace the cream cheese and sour cream with homemade hummus. Skip the ranch seasoning and dried dill.

Dipping Options

While not required, having something to dip the veggie-filled pinwheels into just feels a little fancy. Here are some options:

  • Homemade Ranch Dressing for classic, kid-approved flavor.
  • Mexi-Ranch Dressing adds a little zip and pairs well with the veggie filling.
  • Low FODMAP Pesto for a fresh, herby option that feels a bit fancy.
  • Chipotle Mayo if you want a smoky, slightly spicy dip on the side.

Gluten free tortillas absorb moisture quickly, which makes them soften as soon as the creamy filling is added. This is why they are rolled and sliced right before serving.

What is the best way to roll gluten free tortilla pinwheels without cracking?

Warming the tortillas for a few seconds (not too long or it will melt the creamy layer) in the microwave makes them flexible and easier to roll tightly. A thin, even layer of filling also helps prevent cracking.

Storing

These never last long at my house, so leftovers are rare. However, if you do have leftovers, store them in an airtight container in the refrigerator and enjoy them within one day. The texture will soften as they sit, but the veggies stay fresh.

Do not freeze these pinwheels. It is a better idea to make a fresh batch.

  • Gluten Free Tortillas: choose one with ingredients you know you can tolerate. I have had great results with the Mission Tortilla brand. 
  • Lactose Free Cream Cheese and Sour Cream: If lactose is an issue for you, use lactose free option. If dairy is a no go for you, use low FODMAP hummus for a dairy free option. 
  • Ranch Seasoning: Use homemade ranch seasoning without garlic or onion or purchase a certified low FODMAP ranch seasoning from Smoke and Sanity. 
  • Veggies: Carrots, bell peppers, radishes, and broccoli florets: this recipe uses such small amounts that it is safe. However, if you cannot tolerate one of them, swap it out for something you can tolerate.

Equipment

Ingredients

Creamy Layer:

  • 6 gluten free tortillas (Note 1)
  • 8 ounces softened cream cheese lactose free if needed
  • ½ cup sour cream lactose free if needed
  • 1 tablespoon dry ranch seasoning (Note 2)
  • 1 teaspoon dried dill

Veggies:

  • ¼ cup yellow pepper finely diced
  • ¼ cup red pepper finely diced
  • ¼ cup broccoli florets cut small
  • 6 whole radishes sliced
  • 2 whole carrots peeled into thin ribbons
  • serve with ranch dressing

Instructions

  • Beat together the cream cheese, sour cream, ranch seasoning, and dill until smooth and spreadable.
  • Finely dice the bell peppers and broccoli florets. Stir them into the creamy mixture.
  • Thinly slice the radishes. For the carrots, use a vegetable peeler to shave long ribbons from the center of each carrot; set these aside for layering.
  • Spread the creamy mixture over each tortilla, leaving a small border. If the tortillas are difficult to roll, try microwaving them for 10-15 seconds before adding the creamy layer.
  • Next, place the carrot ribbons in a single layer. Evenly lay the radishes down the center of the tortilla. Roll each tortilla tightly.
  • Slice each roll into pinwheels with a sharp serrated knife, using gentle pressure. Wipe the blade between cuts to keep them neat. Serve right away for the best texture with ranch dressing.

Note 1: Recipe was tested with Mission Gluten Free Tortillas. 
Note 2: For low FODMAPers, use low FODMAP ranch seasoning or purchase one from Amazon. I highly recommend using my recipe because it is delicious! But do what works for you. 
Additional dip options: Guacamole, Chipotle Mayo, Hummus, Mexi-Ranch, Pesto
Make In Advance Notes: Do not assemble the pinwheels until just before serving. This is because the gluten free tortillas do not do well with the moisture and become mushy. To make in advance, make the creamy layer and prep the veggies.
