  • Wild Rice Blend - I love the Lundberg wild rice blend. It has four kinds of rice: black rice, brown rice, red rice, and wild rice. It is easily found at the grocery store. 
  • Chicken Broth -  Use a low-sodium chicken broth or chicken stock to control the salt levels. 
  • Butter - Salted butter because that is what is in my fridge. If you have unsalted butter, use it, and then adjust the salt levels to your taste buds. 
  • Salt - Add and adjust to your desired saltiness. If using the cooked wild rice in another dish, hold off salting until you can taste and adjust.

Step-By-Step Instructions

Step 1: In a 6-quart Instant Pot or any brand of pressure cooker, grease the liner with nonstick cooking spray for easy cleanup. Add the chicken stock and the wild rice. Stir. 

Secure the sealing ring inside the cover, and place the cover on. Set it to high pressure for 18 minutes of cooking time. Once the timer beeps, let the pressure naturally release for 15 minutes. Quick release any remaining pressure, and when the floating valve drops, open the lid.

Step 2: Add the butter and stir. If there is a bit of cooking liquid still in the pot, it is ok; it will be absorbed into the rice. Taste and add salt if needed.

Remove the rice from the Instant Pot to prevent overcooking. Top with herbs, like fresh parsley, if serving as a side dish. Otherwise, set it aside if using in a recipe.

Instant Pot Tips and Tricks

Do not leave the cooked rice on the keep warm setting once the rice is done. It will overcook the rice and ruin the texture. 

Do not mix the rice and the broth in advance. The rice will absorb the mixture while sitting there and turn to mush when cooked. 

Use the white paddle that came with the Instant Pot to stir cooked rice. It is designed not to smash the tender grains of rice. 

Use a small foam brush to clean the Instant Pot nooks and crannies. It works like a charm!

Diet Variations

  • Dairy Free Wild Rice Blend: Replace the butter with olive oil. 
  • Vegetarian Wild Rice Blend: Replace the chicken broth with vegetable broth. 
  • Vegan Wild Rice Blend: Replace the butter with olive oil and the chicken broth with vegetable broth.

Storing And Reheating

Store: Keep the cooked rice in an airtight container in the refrigerator for four days.

Reheat: Place leftovers on a microwave-safe plate, add ice cubes in the center of the plate, cover, and heat for 1-2 minutes. Remove what remains of the ice and stir. 

Freeze: Use a freezer-friendly container and place chilled leftovers in the freezer. Frozen wild rice blend will last in the freezer for four months. Defrost before reheating.

  • 1 cup wild rice blend (Note 1)
  • 1 ½ cups chicken broth (Note 2)
  • 1 tablespoon butter salted
  • ¼ teaspoon kosher salt adjust to taste

Instructions

  • Grease the Instant Pot liner of a 6-quart Instant Pot or any pressure cooker with nonstick cooking spray or softened butter for easy cleanup. Add the chicken broth and the wild rice blend. Stir.
  • Secure the sealing ring in the cover, and place the cover on the Instant Pot. Place on sealing if the Instant Pot requires that step. Set it to high pressure for 18 minutes. Once the the rice is done cooking, let the pressure naturally release for 15 minutes. Quick release any remaining pressure, and when the floating valve drops, open the lid.
  • Add the butter and stir. Taste and add salt if needed. Top with herbs if serving as a side dish or set aside if using in one of your favorite rice dishes.
