Easy to make and easy on the wallet, Instant Pot Rice Pilaf will solve all your side dish problems. Using the Instant Pot is a quick way to add sustenance to a meal. If you have teenagers in your house, you know this struggle. Bonus, it is also delicious!

The beauty of this Rice Pilaf Recipe is in its simplicity. It has only five ingredients, and yet it tastes delicious. This is also a gluten free side dish! This low FODMAP recipe was modified based on Mel's Kitchen.

Step-by-Step Instructions

Step 1: Put the liner in the Instant Pot. Spray with nonstick cooking spray for easier cleanup.

Turn on the saute function and melt the butter. Add the white rice.

Step 2: Toast the rice in the butter until it smells nutty and turns translucent.

Add the chicken broth, salt, and green onions. Stir. Put the sealing ring in place on the cover and secure the lid.

Set the cooking time to 15 minutes. Once it beeps, do a quick release, fluff, and serve.

Tips and Tricks

Do not let the rice sit in the Instant Pot on the keep-warm setting for too long. It will continue cooking and eventually turn to mush.

Do not use instant rice. It is parboiled and will not work in the Instant Pot.

Ingredient Swaps

  • Brown Rice - If you want to substitute brown rice for white rice, it will work. Increase the cooking time to 22 minutes.
  • Basmati Rice - Another fragrant option is to use basmati rice instead of white rice. Keep the cooking times the same.

Variations

Beef Rice Pilaf: Use a low FODMAP beef stock or beef broth in place of the chicken broth. It pairs well with beef dishes, like Mississippi Pot Roast.

Storage and Reheating

Store: Keep leftover rice in an airtight container in the refrigerator. Eat within three days.

Reheat: Microwave leftover rice with an ice cube in the center and cover the rice. This will add moisture to the leftovers. Another option would be to add a bit of butter or even chicken broth.

Freeze: Any cooled leftover rice pilaf can be stored in the freezer for up to three months. Rice must be defrosted before reheating. Add additional moisture for best results.

Low FODMAP Notes

  • Long-Grain White Rice - Safe at 1 cup or 190 grams per meal.
  • Chicken Stock - Use chicken stock without garlic or onion, listed in the ingredients.
  • Green Onion Tops - Safe at 1 ½ cups or 75 grams per meal.
  • Butter - Safe at 1 tablespoon or 19 grams per meal.

FAQs

Can I use the rice function on the Instant Pot?

Yes! Instead of cooking the rice for 15 minutes, just push the rice button. The Instant Pot will automatically cook the rice.

Can I make this vegetarian rice pilaf?

Sure! Swap out the chicken broth for a vegetable broth you love. Because the flavors will be absorbed into the rice, it is important to use a veg broth you like.

What To Serve With Rice Pilaf

This simple rice dish goes well with parmesan lemon chicken or oven baked cod with homemade tartar sauce. It also goes well with grilled chicken. I also enjoy leftover rice and oven-roasted veggies heated up and piled on greens for lunch!

Rice Pilaf With Instant Pot

Equipment

  • 6-Quart Instant Pot

Ingredients

  • 2 tablespoons butter salted
  • 1 ½ cups long-grain white rice
  • ½ teaspoons kosher salt
  • ½ cup green onions
  • 2 cups chicken stock

Instructions

  • Spray the Instant Pot insert with nonstick cooking spray for easy cleanup.
  • Turn the Instant Pot function to saute and melt the butter.
  • While keeping the saute function on, add the rice to the insert and saute the rice in the butter. Stir constantly until the rice turns translucent and smells nutty.
  • Add the green onion tops, salt, and chicken broth. Stir.
  • Place the sealing ring in the cover of the instant pot. If need set the Instant Pot to sealing.
  • Set the manual pressure timer to 15 minutes.
  • Once the instant pot beeps do a quick release of the pressure. Fluff the rice with the white paddle that came with your instant pot and serve immediately.

Notes

Storage:
Keep leftovers in the refrigerator in an airtight container. Eat within three days. Reheat in the microwave with an ice cube in the center and covered. This will help add moisture back to the leftover rice.

      Hi Donna,
      I have not tested this recipe in a rice cooker, but here is what I would do. Sauté the butter and rice in a skillet on the stovetop until translucent and then proceed with the recipe directions in the rice cooker. Adjust the amount of chicken broth if needed based on the manufactures instructions. The ratio of liquid to rice may be different than the Instant Pot. Let me know if it works. -Venessa
