  • Chicken Drumsticks - About 3 pounds, which gives you 8-10 drumsticks and feeds four people easily. Drumsticks are one of the most forgiving cuts of chicken. They stay juicy even if you go a little over on time. I buy the value pack and double the seasonings.
  • Garlic-Infused Olive Oil - All the garlic flavor, none of the FODMAPs. This is the workaround that makes low FODMAP cooking actually enjoyable. My favorite brand is Covita. I buy it from Amazon if your store does not carry it.
  • Cornstarch - The key to getting that crispy finish without a fryer. It pulls moisture away from the surface so the oven can do what a fryer does. Do not skip it.
  • Smoked Paprika - Adds a hint of smokiness and beautiful color to the drumsticks.
  • Freeze-Dried Chives - A mild, onion-adjacent flavor that is completely low FODMAP and causes zero gut drama. Smash them a little between your fingers before adding to the spice mix so they blend in evenly.
  • Celery Salt - Adds a savory depth without any FODMAP triggers.
  • Cayenne Pepper - Optional, but it adds a gentle kick. Leave it out for a totally non-spicy version. My teens vote for the cayenne every time. I usually add it.

Step-By-Step Instructions

Step 1: Preheat the oven to 425 degrees F. Place a wire baking rack on a rimmed baking sheet. Lightly grease the rack with cooking spray or a little oil. Line the baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 2: In a small bowl, combine the cornstarch, kosher salt, black pepper, smoked paprika, freeze-dried chives, celery salt, and cayenne pepper. Stir until everything is mixed together.

Step 3: Drizzle the drumsticks with the garlic-infused olive oil and toss until each one is coated.

Step 4: Sprinkle half the seasoning mixture over the chicken and toss, then add the remaining seasoning and toss again until all sides are covered. Rub the oil and seasoning into the chicken so it sticks.

Step 5: Place the drumsticks on the prepared baking rack, leaving a little space between each one. That space matters - hot air needs to circulate around the drumsticks to get that crispy finish on all sides. If needed, use two pans.

Pull the skin down toward the base of the drumstick if you can. It helps seal in the juices while everything bakes.

Step 6: Bake for 45 minutes or until the outside is browned and crispy. Check the thickest part of the drumstick with an instant-read thermometer, avoiding the bone. Pull them out once the internal temperature hits 185 degrees F. That higher temp is the sweet spot for drumsticks - the meat becomes genuinely tender instead of just technically done.

Let the drumsticks rest for 5 minutes before serving.

Tips and Tricks

Wear disposable food-safe gloves if you are not a fan of touching raw chicken. Just be aware that once the gloves are on, touching anything other than the chicken spreads bacteria around your kitchen. Keep it contained.

Do not skip the wire rack - a cooling rack works too. Otherwise the chicken is flat on a sheet pan, the bottom side steams instead of browns. The rack lets hot air move all the way around the drumstick. I do the same for my low FODMAP chicken nuggets - it changes everything.

185 degrees F is the sweet spot for dark meat. Yes, 165 degrees F is the safe temperature. But drumsticks get genuinely tender and juicy at 185 degrees F. Use an instant-read thermometer and go the extra few degrees. You will not regret it.

Smash the freeze-dried chives. A quick press between your fingers - or if you are fancy, a mortar and pestle - before they go into the spice mix helps release their flavor. Small step, noticeable difference.

Check that the drumsticks are fully thawed. Happened to me once. They were still frozen solid from the grocery store, and we ended up making spaghetti that night instead. Give them a quick check before you start.

Ingredient Swaps

  • Garlic-Infused Oil - If you are out, use avocado oil or any neutral oil. To keep the garlic flavor without the FODMAPs, add a certified low FODMAP garlic salt to the spice mix instead of regular garlic powder, which can be a trigger.
  • Cornstarch - Arrowroot powder is a 1:1 swap and gives a similar result.
  • Cayenne Pepper - Skip it for a non-spicy version, or swap in a small pinch of chipotle pepper powder for milder smoky warmth.

Variations

Extra Crispy Baked Chicken Drumsticks: Run the broiler for the last 3-5 minutes of bake time. Watch them closely, but this gets you that extra crunch on the outside.

BBQ Drumsticks: In the last 10 minutes of baking, brush on your favorite low FODMAP BBQ sauce. My homemade BBQ sauce takes five minutes to mix together and is worth keeping in the fridge at all times.

Dairy Free: This recipe is already dairy free as written. No swaps needed.

Meal Prep This Recipe

Life is busy, folks. Here is what you can do on Sunday to make Wednesday dinner a lot less stressful.

  • Mix up the seasoning blend and store it in a small airtight container or jar. It will keep for weeks.
  • The morning or night before, drizzle the garlic-infused olive oil over the drumsticks and store them in the refrigerator. They can marinate in that oil overnight and it only makes them better.
  • When it is dinner time, preheat the oven, toss the drumsticks in the spice mix, and bake. Done.

One pan, minimal effort, and dinner is on the table without the Wednesday chaos. My kind of math.

Alternative Cooking Methods

Air Fryer: Prepare the drumsticks exactly the same way. Cook at 400 degrees F for 22-25 minutes, flipping halfway through. Check for 185 degrees F internal temp. Faster than the oven, and it still gets a great crispy finish. Depending on the size of your air fryer you may have to do them in batches to keep the drumsticks in a single layer.

Blackstone Griddle: Set the griddle to medium heat and cook the seasoned drumsticks, turning every few minutes until cooked through and the outside is nicely browned. It takes more attention than the oven, but on a summer night in Minnesota when the last thing you want is a 425 degree oven running for 45 minutes, the Blackstone is a very good friend.

Storing and Reheating

Store: Keep leftover drumsticks in an airtight container in the refrigerator for up to 4 days.

Reheat: For the best result, reheat in a 375 degree F oven for 12-15 minutes or in an air fryer. This brings back the crispiness. A microwave works in a pinch, but the skin will soften. Pro move - spray the drumsticks with a little avocado oil before reheating. It helps bring the skin back to life.

Freeze: Let the drumsticks cool completely. Freeze in a freezer-friendly container or zip-top bag for up to 4 months. Defrost overnight in the refrigerator before reheating.

  • Garlic-Infused Olive Oil - Safe at 1 tablespoon or 18 grams per meal. Fructans in garlic are water-soluble, not oil-soluble. That means the flavor transfers into the oil, but the FODMAPs stay with the garlic pieces that get removed. This is why garlic-infused oil shows up in basically every savory recipe on this site. It is that useful.
  • Cornstarch - Safe at 5 tablespoons or 100 grams per meal. The amount used here is well within that range.
  • Smoked Paprika - Safe at 1 teaspoon or 2 grams per meal.
  • Freeze-Dried Chives - Safe at 1 tablespoon per meal. A great low FODMAP way to add mild onion flavor without the gut consequences.
  • Celery Salt, Kosher Salt, Black Pepper, Cayenne Pepper - All safe at typical seasoning amounts.

Look for oils that have been infused and strained, not ones with garlic pieces still floating around in the bottle. It is one of those discoveries that makes following a low FODMAP diet feel a lot less like a punishment.

What To Serve With Chicken Drumsticks

These drumsticks pair well with just about anything. Add roasted tiny potatoes to the oven at the same time and both are ready together with minimal effort. For something heartier, a big scoop of low FODMAP sweet potato mash makes it feel like a real comfort food dinner. Leftovers are great shredded over rice or tucked into a wrap the next day.
