Crispy baked chicken drumsticks seasoned with a simple spice blend and cooked on a wire rack for juicy, tender dark meat every time - no garlic, no onion, and no complicated steps.
Preheat the oven to 425 degrees F. Place a wire baking rack on a rimmed baking sheet. Lightly grease the rack with cooking spray or oil. Line the baking sheet with parchment paper or aluminum foil for easy clean up!
In a small bowl, combine the cornstarch, kosher salt, black pepper, smoked paprika, freeze dried chives, celery salt, and cayenne pepper.
Drizzle the drumsticks with the garlic-infused olive oil and toss until evenly coated. Sprinkle half of the seasoning mixture over the chicken and toss, then add the remaining seasoning again until all sides are coated. Rub the garlic oil and seasonings into the chicken.
Place the drumsticks on the prepared baking rack, leaving space between each one so the hot air can circulate. Pull the skin down if possible to help seal in the juices.
Bake for 45 minutes or until the outside is browned and crispy. Check the thickest part of the drumsticks with an instant-read thermometer, avoiding the bone. Remove from the oven once the chicken is at 185 degrees F for the most tender chicken.
Let the drumsticks rest for 5 minutes before serving.

Note 1: If you don’t have garlic-infused olive oil, feel free to use avocado oil.For extra crispy skin: Spray the chicken with avocado oil in an oil mister. If reheating the chicken drumsticks this is a must do to bring back crispy skin!
