Step-By-Step Instructions
Step 1: Grab a medium-sized mixing bowl. Crack the eggs and whisk them until they are beaten.
Step 2: Next, add the cooked and drained wild rice, chopped canned mushrooms, mayonnaise, mashed potato flakes, ground cumin, kosher salt, ground black pepper, paprika, and liquid smoke. Stir until combined.
Step 3: Place plastic wrap over the hamburger patty maker. This will help release the wild rice burger easily once it's formed.
Add ½ cup of the wild rice burger mixture to the patty maker. For a larger burger, add 1 cup. Press the burger into the mold.
Step 4: In a large skillet, warm a tablespoon of avocado oil over medium-low heat. When the pan is heated, place the burger patty in it. Cook until it turns golden brown, about 5-8 minutes. Once the burger patty is seared, it will flip easily without crumbling. Even if it does fall apart, it will still taste great! Avoid moving it during cooking.
When golden brown, carefully turn it over and cook the other side for 5 - 8 minutes until that side is also golden. If you plan to add a slice of provolone cheese, do so now. Cover the skillet to melt the cheese.

Wild Rice Burgers

- 1 cup 8 ounces wild rice, uncooked (Note 1)
- 3 cups vegetable stock (Note 2)
- 3 large whole eggs
- 8 ounces canned mushrooms drained and diced
- ¾ cup mayonnaise
- 1 cup mashed potato flakes (Note 3)
- 2 teaspoons ground cumin
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1 teaspoon paprika
- 1 teaspoon liquid smoke
- avocado oil for cooking
- Serving: hamburger buns or lettuce wraps
- Toppings: provolone cheese, butter lettuce, sliced tomatoes, sliced avocados, BBQ sauce or hot sauce
Instructions
Make In Advance:
- In a medium saucepan with a cover, bring the vegetable stock up to a boil. Once boiling, add the wild rice. Stir. Add the cover and turn the heat down to low and simmer for 35-45 minutes. Once cooked, drain and refrigerate.
To Make The Burgers:
- In a large mixing bowl, add the eggs. Whisk until beaten.
- To the eggs, add the cooled, cooked wild rice, diced mushrooms, mayonnaise, mashed potato flakes, ground cumin, kosher salt, black pepper, paprika and liquid smoke. Stir until well combined.
- For easy clean up, place a piece of plastic wrap over a hamburger patty maker. Add ½ cup of the wild rice mixture into the burger maker. Press and form it into a burger patty.
- In a large skillet, add 1 teaspoon of avocado oil. Turn the heat to medium low. Once the oil is hot, add the wild rice burger patty. Cook for 4-7 minutes or until golden brown. Gently turn with a spatula. Cook the other side for 4-7 minutes. If adding cheese, place a slice on top of the patty and cover. Remove once melted.
- Serve the burger patties on hamburger buns, lettuce wraps, or bunless with toppings like BBQ sauce or hot sauce, melted provolone cheese, lettuce, sliced tomato - or use whatever you love.
