Low FODMAP Sweet and Spicy Pecans

I dare you to try to eat only a handful of low FODMAP sweet and spicy pecans. The hint of spice, paired with the sweet candied pecan half and a touch of smokiness, is utterly delicious. To save yourself a trip to the store to buy more ingredients, make a double batch. Everyone will love this perfect low FODMAP snack, from the first batch to the second batch.

These candied pecans are destined to be a beloved snack. Incorporate them into a charcuterie board for a tasty pairing with cheeses, crackers, and fresh fruit. For a sweet and spicy twist, replace the regular pecans in homemade low FODMAP trail mix with these. I’m a fan of this Trader Joe's copycat recipe for sweet and spicy pecans.   • Maple Syrup - Adds sweetness and the perfect maple flavor. Use pure maple syrup, not the imitation kind usually found with high fructose corn syrup listed in the ingredients.
  • Brown Sugar - Another layer of sweetness. 
  • Spice Mix - Cinnamon, Ancho Chili Powder, Cayenne Powder and Kosher Salt

Step-By-Step Instructions

Step 1: In a medium-sized microwave-safe bowl.  Add the coconut oil, maple syrup, brown sugar, and spice mix. Stir.

Step 2: Stir the pecans into the sugar mixture. Microwave for 30 seconds. Stir until pecans are well coated. Microwave for another 30 seconds if needed.

Step 3: Line a baking sheet with parchment paper. Spray with nonstick cooking spray. This will help prevent the pecans from sticking. Place the pecan halves in a single layer on the prepared baking sheet. Use a spatula to scrape out that last bit of glaze sticking to the sides of the bowl.

Step 4: Bake for 10 minutes in a preheated 325 degree F oven. Remove the hot baking sheet and stir. Bake again for another 5 minutes. Stir. Watch the pecans carefully. They will easily go from a rich brown color to burnt.

Tips and Tricks

Use chopped pecans as a budget-friendly option. 

Placing a piece of parchment paper on the baking sheet will make clean-up super easy.

Ingredient Swaps

  • Oil: Use olive oil or canola oil instead of coconut oil. 
  • Spices: Use chili powder in place of the ancho chili powder. 
  • Maple Syrup: Swap out the maple syrup for corn syrup if you do not have pure maple syrup.

How To Use Sweet and Spicy Pecans

Salad Topping: Use in a spinach salad with mandarin oranges. 

Potato Topping: A topping for mashed sweet potatoes. 

Snacking: A great afternoon snack with a cup of coffee.

Ice Cream Topping: Sprinkle a bit over a bowl of ice cream.

Storing

Store: Keep cooled pecans in an airtight covered container at room temperature for up to four days. 

Freeze: Pecans can be frozen for a longer storage option. Keep them in a freezer-friendly airtight container and defrost them before eating.

Are pecans low FODMAP?

According to Monash University, halved pecans are safe at 15 halves or 30 grams per meal. 

Can I freeze pecans?

Yes, freeze pecans in an airtight container. It can keep them fresh for much longer than if stored in the pantry.

Can I use walnuts instead?

Sure! This recipe is very versatile. Walnuts are another great low FODMAP option.

Equipment

  • Baking Sheet
  • Parchment Paper

Ingredients

  • 3 tablespoons pure maple syrup (Note 1)
  • 2 tablespoons brown sugar
  • 1 tablespoon coconut oil
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ancho chili powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon kosher salt
  • 2 cups pecans (Note 2)

Instructions

  • Preheat oven to 325 degrees F. Line a baking sheet with parchment paper and spray with nonstick cooking spray. This will help keep the pecans from sticking.
  • Combine all the ingredients except the pecans in a medium bowl that is microwave-safe. Stir.
  • Add the pecans to the bowl and microwave for 30 seconds. Stir and microwave again for 30 seconds. This will help coat the pecans evenly.
  • Spread the pecans evenly on a baking sheet in a single layer. Bake the pan for 10 minutes.
  • Remove the pan, stir the pecans, and bake again for another 5 minutes. The pecans should be a deep golden brown. However, they will quickly turn burnt. Watch them carefully, and don’t walk away.
  • Store the cooled pecans in an airtight container at room temperature.

Notes

Note 1: Only use pure maple syrup. Do not use imitation maple syrup, which can contain high fructose corn syrup.
Note 2: Either pecan halves or chopped pecans can be used. 
How to use pecans: as a snack, salad topping, or as a topping for sweet potatoes.
