Low FODMAP chipotle mayo is my secret weapon for turning a boring Tuesday sandwich into something my teens actually get excited about. It's smoky, a little zippy, and just spicy enough to make this Minnesotan feel adventurous. Ask me how I know plain mayo doesn't cut it anymore.

Plain mayo has its place, but folks, this is not that. I started making this because every chipotle mayo at the store had garlic or onion snuck into the ingredient list, and I was tired of squinting at labels only to put it back on the shelf. This version gives you that same smoky, creamy, slightly spicy vibe with ingredients you can actually trust.

Once you have a jar of this in the fridge, you'll find yourself reaching for it constantly. It's the sauce I slather on my chipotle chicken sandwiches and honestly it's what makes my fish stick tacos feel way more exciting than "fish stick tacos" has any right to sound.   • Mayonnaise - Use a high quality mayo that is low FODMAP. Do not swap it for Miracle Whip. It's too sweet and includes high fructose corn syrup, which isn't low FODMAP. For a vegan chipotle mayo, use a vegan mayo like the option from Primal Kitchen.
  • Fresh Lime Juice - Squeeze it fresh. Bottled lime juice doesn't bring the same brightness to the sauce.
  • Ground Chipotle Chili Powder - This is where the smoky flavor comes from. Find it in the spice aisle at most grocery stores or grab it on Amazon. It's earthy and smoky, not fiery hot.
  • Smoked Paprika - Doubles down on that smoky flavor. If you cannot find smoked paprika, use regular paprika and add a small splash of liquid smoke. A little goes a long way.
  • Sea Salt - Brings everything together and balances the lime.

Step-By-Step Instructions

This is one of those recipes where the instructions are almost too simple.

Step 1: In a medium bowl, add the mayo, lime juice, chipotle chili powder, smoked paprika, and salt. Stir until fully combined.

Step 2: Transfer the chipotle mayo to an airtight container. Refrigerate for at least 30 minutes before using. This resting time lets the flavors meld together, and the sauce will taste even better after sitting overnight.

That's it. Two steps. It works like a charm every single time.

Tips and Tricks

Taste before you refrigerate. Give it a quick taste and adjust. Want more smokiness? Add a pinch more smoked paprika. Want more zip? Squeeze in extra lime. It's easy to tweak before it sets.

Resting time matters. Thirty minutes in the fridge is the minimum, but this chipotle mayo genuinely tastes better the next day. Make it ahead whenever you can.

Make a double batch. This sauce disappears fast in a hungry household. If you're making it for a cookout or taco night, double it. Same amount of dishes, less work later. My kind of math.

  • Lime Juice - Lemon juice can work in a pinch, but lime is really the move for this sauce.

Variations

Spicy Chipotle Mayo - Add a pinch of cayenne pepper for extra heat. Start small - you can always add more but you cannot take it back.

Creamy Chipotle Ranch - Stir in a teaspoon of low FODMAP ranch seasoning for a smoky-meets-tangy combo. I make my own homemade low FODMAP ranch and it is the kind of thing I always have in the fridge. The two together are really something.

Chipotle Lime Crema - Swap half the mayo for lactose-free sour cream to make a lighter, tangier version that is great on tacos or burrito bowls.

How To Use Chipotle Mayo

This is where things get fun. Chipotle mayo is one of those sauces that makes everything better.

  • Spread it on sandwiches and burgers instead of plain mayo
  • Use it as a dipping sauce for french fries or sweet potato fries
  • Drizzle it over tacos, burritos, or burrito bowls
  • Add it to a wrap or a chipotle chicken sandwich for a seriously good lunch
  • Serve it alongside fish stick tacos for a quick weeknight dinner the kids will actually eat
  • Use it as a salad dressing base - thin it out with a little extra lime juice

My Quesadilla Burgers are unreal with this chipotle mayo drizzled on top. Highly recommend trying that combo on the Blackstone this summer.

Storing

Store: Keep chipotle mayo in an airtight container in the refrigerator for up to one week. Give it a good stir before using since it can separate slightly.

Freeze: Do not freeze. Mayonnaise does not freeze well and will separate. Make a fresh batch instead.

Ingredients

  • 1 cup mayonnaise (Note 1)
  • 4 teaspoons fresh lime juice
  • 1 teaspoon ground chipotle chili powder
  • ½ teaspoon smoked paprika (Note 2)
  • ½ teaspoon sea salt

Instructions
