Wash and cut the potatoes in half or in fourths to make them the same size.
In a medium bowl, add the halved potatoes, avocado oil, and garlic oil. Stir.
Next, add the dried parsley and kosher salt. Stir.
Grab a large baking sheet and cover it with parchment paper for easy clean up. Pour the seasoned potatoes on the baking sheet and spread them out evenly.
Bake in a preheated 400 degree F oven for 20-30 minutes or until golden brown. Remove and add toppings if wanted.

Note 1: Garlic infused olive oil is oil with all the garlic flavor without garlic. Find it at Trader Joes or on Amazon. Storing: Leftover potatoes can be stored in an airtight container in the refrigerator for up to four days. To maintain their crispiness, they are best reheated in a 350-degree F oven or an airfryer.
