Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or lightly grease it.
In a large mixing bowl, crack open the egg and whisk it until it turns a pale yellow color. Then add the gluten free panko, feta cheese, olive oil, lemon zest, fresh parsley and the greek seasoning mix. Stir until combined.
Next add the ground chicken. Mix just until everything is combined. Avoid overmixing, which can make the meatballs tough.
Using a cooking scoop, roughly divide the meatball mixture into loose cookie-sized scoops. Then add olive oil or water to your hands, roll each meatball, and place them on a prepared baking sheet about 1 inch apart.
Bake for 18 to 22 minutes, or until the internal temperature reaches 165 degrees F.
While the meatballs bake, make the yogurt sauce. In a small bowl, add the Greek yogurt, fresh lemon juice, dried dill and kosher salt. Stir until combined. Keep in the refrigerator until ready to use.
To serve, top the meatballs with yogurt sauce, extra crumbled feta cheese, chopped fresh parsley, and freshly cracked pepper.

Note 1: For a less fat option, use lean ground chicken made from chicken breasts. Note 2: If needed use gluten free panko crumbs, if not regular will work too.
