In a large skillet, cook and crumble the ground beef until no pink remains. Drain if needed, then stir in the Thousand Island dressing, mayonnaise, smoked paprika, onion powder, ground mustard, black pepper, and dill relish until combined.
Spread the beef mixture evenly into a greased 9x13-inch baking dish. Top with sliced cheddar cheese and layer the pickle slices on top.
Arrange the tater tots in an even layer over the pickles. Bake for 45–55 minutes, or until the tater tots are golden and crispy.
To serve, top with shredded lettuce, diced tomatoes, extra pickles, a drizzle of Thousand Island, and a sprinkle of sesame seeds. For a fun twist, scoop onto toasted sesame hamburger buns.
Notes
Note 1: For a low FODMAP Thousand Island dressing, make your own at home for a safe option without hidden onion or garlic.Note 2: For a low FODMAP onion option, use Essence of Onion Salt from Smoke and Sanity.Note 3: Grab a bag pre-sliced cheddar cheese used for sandwiches. Shredded cheddar also works perfectly. I also tested American cheese. It was tasty but turned out a little too greasy for my crew.Low FODMAP Notes: Low FODMAP ingredient information is based on the Monash University Food App and FODMAP Friendly App testing results.
